- 200grams white cabbage, finely shredded (about 1/4 cabbage)
- 1/4 red cabbage, finely shredded (about 200g)
- 1 large carrot, peeled and grated (about 250g)
- 1/2 cup coriander leaves, roughly chopped
- 2 spring onions, sliced
- 1/2-1teaspoons dried chilli flakes
- 1teaspoons lemon, rind finely grated
- 1/4 cup Greek-style yoghurt
- 2tablespoons whole egg mayonnaise
- 1/2 cup buttermilk
- 1teaspoons flaked salt
- 1tablespoons fresh chives, finely chopped
- 1tablespoons honey
Method
Step 1 of 2
Combine buttermilk, yoghurt, mayonnaise, chives, honey and lemon rind. Season to taste with salt and chilli. Whisk well. Cover and chill.
Step 2 of 2
Combine cabbage, carrot and onion in a bowl. Add coriander and dressing and toss well to combine. Serve.
