  • 200grams white cabbage, finely shredded (about 1/4 cabbage)
  • 1/4 red cabbage, finely shredded (about 200g)
  • 1 large carrot, peeled and grated (about 250g)
  • 1/2 cup coriander leaves, roughly chopped
  • 2 spring onions, sliced
  • 1/2-1teaspoons dried chilli flakes
  • 1teaspoons lemon, rind finely grated
  • 1/4 cup Greek-style yoghurt
  • 2tablespoons whole egg mayonnaise
  • 1/2 cup buttermilk
  • 1teaspoons flaked salt
  • 1tablespoons fresh chives, finely chopped
  • 1tablespoons honey

Method

Step 1 of 2

Combine buttermilk, yoghurt, mayonnaise, chives, honey and lemon rind. Season to taste with salt and chilli. Whisk well. Cover and chill.

Step 2 of 2

Combine cabbage, carrot and onion in a bowl. Add coriander and dressing and toss well to combine. Serve.
