Description
This creamy gnocchi bake is an Italian delight that's easy on your budget and time.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Heat oil in a large ovenproof frying pan over medium-high heat. Add mince and cook, breaking up mince with a wooden spoon, for 6 minutes or until cooked through and browned. Add capsicum and cook for a further 2 minutes or until tender.
Step 2 of 4
Meanwhile, cook gnocchi in a large saucepan of boiling water according to packet instructions. Drain. Add sauce, gnocchi and three-quarters of the spinach to mince mixture. Stir over low heat until well combined. Remove from heat.
Step 3 of 4
Top with mozzarella. Transfer pan to oven and bake for 10-12 minutes or until mozzarella has melted.
Step 4 of 4
Remove from oven and stand for 2 minutes. Top with remaining spinach and season with freshly cracked black pepper. Serve.
