For the base
- 150grams oatmeal biscuits
- 20grams hazelnuts, crushed
- 75grams butter
For the crumbled
- 100grams Christmas pudding
- 100grams dark chocolate
- 100grams milk chocolate
- 500grams ricotta
- 50grams icing sugar
- 2/3 cup double cream
Description
A creamy cheesecake with the added festive flavours of Christmas pudding.
Method
Step 1 of 5
Prepare the base by combining the biscuits, crushed hazelnuts and butter.
Step 2 of 5
Transfer this to the base of your cake tin and push down hard and then place the broken pudding pieces on top of that. Put into the fridge while you arrange the rest of ingredients.
Step 3 of 5
In a large pot, melt the chocolate with the cream.
Step 4 of 5
Once melted, add the rest of the ingredients apart from the rocher sweets and once combined fully... empty the contents into the cake tin.
Step 5 of 5
Allow the cake to set in the fridge for up to 4 hours before serving.
