- 1tablespoons vegetable oil
- 1tablespoons sambal oelek
- 1tablespoons red curry paste
- 1 small brown onion, halved, sliced
- 2 garlic cloves, crushed
- 6 kaffir lime leaves, finely shredded
- 300milliliter coconut milk
- 1tablespoons fish sauce
- 1tablespoons brown sugar
- 500grams firm white skinless fish fillets, cubed
- 1/2 cup basil leaves
- steamed brown rice and sliced cucumber (to serve)
Description
Choo chee curry is a type of Thai red curry often made with fish. Try this version of the fragrant fish curry for a quick and warming weeknight dinner.
Method
Step 1 of 4
Heat a large frying pan over medium heat. Add oil, sambal oelek and curry paste and cook gently for 2 minutes or until fragrant.
Step 2 of 4
Stir in onion, garlic and lime leaves and cook until onion has softened. Add coconut milk, fish sauce and sugar, stirring to combine. Simmer for 5 minutes.
Step 3 of 4
Add fish to pan, turning to coat. Simmer for 5 minutes or until cooked through.
Step 4 of 4
Remove from heat and scatter over basil. Serve with rice and cucumber.
