- 2 clove garlic, crushed
- 2tablespoons extra virgin olive oil
- 4 skinless chicken thigh cutlets
- 2tablespoons plain flour
- 1 red onion, cut into wedges
- 400grams Swiss brown mushrooms, halved
- 475grams classic potato mash
- 1/2 cup sour cream
- 1 bunch broccolini, halved, steamed

Description
Turn chicken stroganoff into a traybake with this easy recipe. Creamy mash and silky mushroom sauce makes this a hearty, fuss-free dinner for the family.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced.
Step 2 of 5
Combine paprika, Worcestershire sauce, garlic and half the oil in a large bowl. Season with pepper. Add chicken and turn to coat.
Step 3 of 5
Place flour on a plate. Heat remaining oil in a large frying pan over medium-high heat. Reserving marinade, toss chicken, one at a time, in flour. Add chicken to pan and cook for 2 minutes on each side or until browned. Transfer chicken and reserved marinade to a baking tray with sides. Add onion to tray and bake for 20 minutes or until chicken is almost cooked through.

Add mushrooms to tray. Bake for a further 20 minutes or until chicken is golden and cooked through.

Meanwhile, heat mashed potato according to packet instructions. Transfer chicken to a plate. Add sour cream to tray and stir until smooth. Divide mash and broccolini among shallow bowls. Top with chicken and mushroom mixture. Serve.
