  • 255grams raspberry-flavoured jelly crystals
  • 300grams cherries, half pitted and halved
  • 250grams raspberries
  • 100grams dark chocolate, broken into pieces
  • 100grams instant vanilla pudding mix
  • 1/4 cup cocoa powder, sifted
  • 450milliliter milk
  • 600milliliter Woolworths tub thickened cream
  • 1/4 cup icing sugar mixture
  • 2 Woolworths lamington bar cakes, thickly sliced

Description

A must-have for your Christmas table, try this eye-catching raspberry and cherry lamington trifle to impress guests and have them coming back for more.

Tip:

Don’t have a trifle bowl? You can use any type of glass vase or bowl with at least 4L capacity.

Method

Step 1 of 4

Prepare jelly according to packet instructions. Allow to cool slightly. Pour jelly into a 4L capacity trifle bowl. Carefully drop in pitted cherries and half of the raspberries. Refrigerate for 6 hours or until set.

Step 2 of 4

Meanwhile, place chocolate in a microwave-safe bowl. Microwave on high for 2 minutes, stirring every 30 seconds, or until melted and smooth. Line a large baking tray with baking paper. Spread a thin layer of chocolate over baking paper. Loosely roll baking paper from 1 short side, then refrigerate until required.

Place pudding mix, cocoa, milk and half of the cream in the bowl of an electric mixer fitted with a whisk attachment. Whisk on medium speed for 1 minute or until mixture is thick and smooth. Place remaining cream and icing sugar in a another mixing bowl, then beat for 2 minutes or until soft peaks form.

Step 4 of 4

Layer lamington over set jelly. Spoon over pudding mixture. Dollop over cream mixture and decorate with remaining raspberries, cherries and chocolate shards.
