- 900milliliter thickened cream
- 2 chocolate mud cakes
- 2tablespoons peppermint essence
- 1 handful mint leaves
- 500grams strawberries
- 10 mint flavoured candy canes

Step 1 of 3
Whip cream and essence for 2 minutes or until stiff peaks form.
Step 2 of 3
Arrange one third of the mud cake slices over the base of a 20cm trifle bowl (3L capacity). Arrange strawberries and mint against the inside of the bowl. Fill with one third of the cream and sprinkle with one third crushed candy canes. Repeat to make second layer. Top trifle with remaining cake, strawberries and cream and refrigerate until ready to serve.

Just before serving, top trifle with remaining crushed candy canes and candy cane popcorn.
