- 3 red onions, finely sliced
- 10 oatcakes (to serve)
- 1tablespoons olive oil
- 20grams butter
- 1 pinch salt
- 2tablespoons red wine vinegar
- 1tablespoons soft brown sugar
- 10 mini pickled figs
- 1/2 fig
- 1 sprig rosemary (to garnish)
Method

Heat 3 finely sliced red onions, 1 tbsp chopped rosemary, 1 tbsp olive oil, and 20g butter until wilted. Add a pinch of sea salt, stir, then add 2 tbsp red wine vinegar and 1 tbsp soft brown sugar. Reduce the heat and cook for 7 minutes until caramelized. Cool. Slice 10 mini pickled figs in half. Top each oatcake with 1 tsp of onion mixture and 2 thin diagonal slices of Manchego. Garnish with 1/2 a fig and scatter with rosemary.
