Description
On the table in less than 25 minutes, this comforting one-pot creation makes mealtime a breeze. With a hint of spice, a hit of zestiness and some must-have prawns, pantry-staple long-grain rice is taken to ultra new heights.
Method
Step 1 of 5
Zest two of the limes, then juice. Cut remaining limes into wedges.
Step 2 of 5
Heat oil in a large heavy-based saucepan over medium-high heat. Add prawns. Cook, stirring, for 2 minutes. Add chorizo and seasoning. Cook, stirring, for 2 minutes or until prawns change colour. Transfer to a plate.

Add onion to pan. Cook, stirring, for 2 minutes or until beginning to soften. Add garlic. Cook for 30 seconds or until fragrant. Stir in rice and curry powder until well combined. Add stock. Bring to the boil. Stir. Reduce heat. Cover with a tight-fitting lid. Simmer for 10 minutes.
Step 4 of 5
Add prawn mixture and peas to rice. Stir to combine. Cook, covered, for 5 minutes or until rice is tender. Remove from heat. Add lime juice and coriander. Season.
Step 5 of 5
Spoon pilaf into serving bowls. Top with lime zest. Serve with lime wedges.
