  • 80grams broccoli florets
  • 1 cup frozen baby peas, blanched
  • 1 spring onion, chopped
  • 1 free range egg, lightly beaten
  • 1/4 cup Oli6® Goat Milk Toddler Drink Stage 3 From 1 Year
  • 2tablespoons plain flour
  • 1tablespoons shredded tasty cheese
  • 20grams avocado
  • 1/4 cup Greek-style natural yoghurt
  • 1tablespoons extra virgin olive oil

Description

Made using Oli6 Goat Milk Toddler Drink, these broccoli and pea fritters are full of bright colour and flavour – and easy for little ones to enjoy.

Method

Step 1 of 4

Process broccoli in a small food processor until finely chopped. Add peas and onion and blitz until combined. Transfer to a large bowl.

Step 2 of 4

Add egg, formula, flour and cheese to broccoli mixture and mix well.

Step 3 of 4

Mash avocado in a small bowl. Add yoghurt and mix well.

Step 4 of 4

Heat oil in a large non-stick frying pan over medium-high heat. Spoon 5 separate 1 1/2 tablespoonfuls of mixture into pan. Cook for 2 minutes or until golden-brown underneath. Flip and cook for a further 1-2 minutes or until cooked and golden-brown. Transfer to a plate. Repeat to make 10 fritters in total. Serve with avocado yoghurt.
