Method
Step 1 of 3
Place blueberries, syrup and vanilla in a frying pan over medium heat. Bring to a simmer and cook for 15 minutes or until mixture has thickened and is syrupy. Transfer blueberry mixture to a bowl. Cover and refrigerate for 1 hour or until cold.
Step 2 of 3
Stand ice-cream at room temperature for 15 minutes to soften slightly. Transfer to a bowl, then swirl in blueberry mixture (do not overmix). Return ice-cream mixture to the same container or a freezer-safe container and freeze overnight.
Step 3 of 3
Place half the doughnut halves on a flat surface. Top each with a scoop of ice-cream. Stand for 3 minutes to soften slightly, then sandwich with remaining doughnut halves, pressing gently to ensure ice-cream covers bases. Freeze until ready to serve.
