For the garnish
  • 50grams dark chocolate, grated to shards
For the sponge
  • 400grams flour
  • 1teaspoons allspice
  • 100grams brown sugar
  • 200grams dark sugar
  • 2teaspoons baking powder
  • 2teaspoons bicarbonate soda
  • 4 medium eggs, free range
  • 200milliliter milk
  • 3/4 cup vegetable oil
  • 400grams cherries
  • 1 1/4 cup whipped cream
  • 4tablespoons icing sugar

Description

Super soft cakes that are moist & sweet with the classic combination of cherry and chocolate.

Method

Step 1 of 8

Pre-heat the oven to 180°C/160°C fan-forced. In a bowl, combine the flour with the all spice, baking powder, baking soda and set to one side.

In a seperate bowl, crack and beat the eggs and then combine with the oil, milk and sugar and mix for 3 minutes.

Step 3 of 8

Now fold your dry ingredients into your wet ingredients until mixed fully.

Transfer the mixture to a deep buttered cake tin and bake for 30 minutes or until cooked through.

Remove from the heat and allow to cool fully. Then using a circular cake round, cut out 6 pieces and slice in half.

In a bowl, combine the whipping cream with icing sugar until fluffy.

Step 7 of 8

Now layer half your cream and half your cherries onto one sponge, then place the second sponge on top.

Use the rest of the cream and cherries on top and sides of your cake and garnish with dark chocolate shards before serving.
