- 2 large beetroots
- 2tablespoons olive oil
- 4 clove garlic, minced
- 1/4teaspoons dijon mustard
- 1 brown onion, diced
- 2 bay leaves
- 1 can tomatoes, chopped
- 3 red chillies (of your choice)
- 1tablespoons Hov's kitchen chilli oil
- 1/2teaspoons turmeric
- 1 cinnamon stick
- 1/2 can coconut milk
- 1/2 cup water
- 1/2teaspoons cumin
- 1teaspoons salt (to your taste)

Description
Beetroot curry is an easy simple dish that is absolutely delicious.
Method
Step 1 of 4
Peel the beetroots and cut them into matchsticks.
Step 2 of 4
Heat the olive oil and the chilli oil in a large saucepan. When the oil is hot, add the chopped onion, minced garlic and chopped red chillies and stir until they have softened.
Step 3 of 4
Add the beetroot matchsticks and the spices, stir until well combined. Then add the chopped tomatoes, coconut milk and water. Simmer for 30 minutes or until the sauce has thickened and the beetroot has softened. Add salt and pepper to your liking.

Serve with steamed rice and roti
