  • 1/4 cup coriander, roughly chopped
  • 2tablespoons coriander, finely chopped
  • 1/4 cup red onion, diced
  • 1 cup corn (fresh or thawed if frozen)
  • 1 cup cherry tomatoes, halved
  • 2 fresh lime juice, 1/3 cup juiced
  • 1 pinch fresh ground pepper (to taste)
  • 3tablespoons extra virgin olive oil
  • 1tablespoons sea salt (more to taste)

Method

Step 1 of 4

Place the corn, cherry tomatoes, red onion and coriander in a large bowl and toss to combine.

Step 2 of 4

In a small bowl, whisk the lime juice, olive oil, coriander, ground pepper and salt.

Step 3 of 4

Pour dressing over veggies and toss to combine. Now add avocado and toss gently so they don't squish. Taste for salt and pepper, add as needed.

Step 4 of 4

Serve immediately or refrigerate for 30 minutes. Serve with fresh pita bread, tortilla chips or a side of rice.
