  • 2tablespoons butter
  • 2 cup coleslaw mix
  • 1.80kilograms whole chicken free range
  • 1 bunch broccolini, sliced into strips
  • 3 limes juiced
  • 1teaspoons extra virgin olive oil
  • 1tablespoons allspice
  • 1/2teaspoons cayenne pepper
  • 1teaspoons ground cinnamon
  • 2 cup baby spinach leaves (to serve)
  • 2teaspoons sea salt

Method

Step 1 of 4

Melt butter in a frying pan over high heat and brown chicken all over. Remove chicken from pan and set aside.

Step 2 of 4

Add the lime juice and spices to the frying pan and cook for one minute or until fragrant. Rub chicken all over with spice mixture including the cavity. Place chicken into slow cooker. Cover and cook on low for 6 hours.

Step 3 of 4

To make the broccolini slaw, heat oil in a large frying pan on low-medium heat. Add broccolini and cook for 2-3 minutes or until almost tender. Remove from heat and add coleslaw mix and lime juice. Toss all the ingredients to combine.

Step 4 of 4

Remove chicken from slow cooker and shred meat from the bone. Separate shredded chicken into 6 serves. Serve each portion with slaw and spinach leaves.
