- 1/2 cup coconut cream
- 2 ripe avocados
- 125grams fresh raspberries
- 200grams dark cooking chocolate, chopped (and extra grated to serve, optional)
- 1/4 cup cocoa powder
- 1/4 cup caster sugar
- 2teaspoons vanilla extract

Method
Step 1 of 3
Pour coconut cream into a small saucepan. Add chocolate and heat over a low heat, stirring constantly until almost melted. Remove from the heat and stir until smooth. Stir in cocoa powder, vanilla and sugar. Set aside to cool 10 minutes.

Cut the avocados in half and remove the stone. Scoop the flesh into the bowl of a food processor. Process for 10 seconds. Scrape down the sides, add chocolate mixture and process for a further 10-15 seconds until smooth.
Step 3 of 3
Spoon into chilled serving jars or glasses. Cover and refrigerate for 3 hours until chilled. Serve topped with berries and extra grated chocolate. Tip 1: You can replace the dark chocolate with milk chocolate. Tip 2: You can replace the coconut cream with thickened cream. Tip 3: To add texture to the mousse, fold through chopped toasted pistachio nuts.
