  • 800grams salmon fillets (4 pieces)
  • 2 bunch asparagus, end trimmed
  • 1 large brown onion, sliced
  • 1 lemon, cut into wedges (to serve)
  • 1 cup white wine
  • 1 pinch pepper (for seasoning)
  • 2 bay leaves
  • 250milliliter hollandaise sauce
  • 1 cup fish stock (or water)
  • 400grams Woolworths Cook baby herb & butter potatoes,, cooked (to serve)
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Place stock, wine, onion and bay leaves, into a large, deep frying pan. Season with salt and pepper. Place over medium heat and bring to a gentle simmer.

Step 2 of 4

Add salmon, skin side down. Cover with lid and turn heat to low for 10 minutes.

Step 3 of 4

Add asparagus, cover and cook for a further 5 minutes until asparagus is tender and salmon is cooked through. Heat hollandaise sauce following pack instructions.

Step 4 of 4

Remove asparagus and salmon from pan with a slotted spoon. Drain on paper towel. Divide between serving plates. Spoon over hollandaise sauce and serve with potatoes and lemon.
