  • 2 cloves garlic, finely chopped
  • 2tablespoons basil, shredded
  • 1/2 cup dry white wine
  • 1 white onion, finely chopped
  • 4 roma tomatoes, diced
  • crusty bread (to serve)
  • 600milliliter tomato passata
  • 500grams seafood marinara mix
  • 2tablespoons olive oil
  • 2 cup fish stock

Method

Step 1 of 5

Heat olive oil in a large saucepan over medium heat.

Step 2 of 5

Add white onion and garlic cloves. Cook for a few minutes until softened.

Step 3 of 5

Add seafood marinara mix, in batches, and cook for 2-3 minutes until it just changes colour. Using a slotted spoon, transfer to a bowl.

Step 4 of 5

Add dry white wine to pan and cook over high heat, scraping the base to dissolve cooked-on flavour. Add fish stock and tomato passata. Bring to the boil. Season to taste.

Step 5 of 5

Return seafood to the pan with roma tomatoes and simmer for 5 minutes. Divide mixture among bowls. Top with shredded basil. Serve with crusty bread.
