Description
Classic Italian veal marsala is hard to beat and easier than you would think to whip up, delicious served with potatoes or pasta.
Method
Step 1 of 3
Spread the flour on a plate and coat each escalope lightly. Heat half of the butter and oil in a large pan on medium high heat and cook for 2 minutes on each side. Remove from the pan and set aside.
Step 2 of 3
Heat the remaining butter and olive oil in the same pan and cook the onions and garlic for 5 minutes, add the mushrooms and cook for 5 minutes. Increase the heat to high, pour over the marsala and cook for 2-3 minutes until reduced by half.
Step 3 of 3
Turn the heat back down, stir in the chicken stock and place the veal escalopes back in the sauce. Cook for 10 more minutes and serve immediately.
