  • 2 medium capsicums, red, cored and sliced
  • 2 medium red chillies, diced
  • 400grams chopped tomatoes
  • 4 eggs
  • 1/2 bunch coriander, fresh, chopped
  • 75grams feta, crumbled
  • 1 pinch cracked black pepper

Description

Turkish style eggs menemen combines sweet capsicums with baked eggs for a delicious and spicy breakfast or brunch.

Method

Step 1 of 3

Heat the oil in a large non-stick pan on medium heat and cook the onions for 5 minutes. Add the capsicums and chilli and cook for 5 minutes.

Step 2 of 3

Pour over the chopped tomatoes and simmer for 8-10 minutes, until reduced. Make 4 well in the sauce and crack in the eggs. Cook for 3-4 minutes on low heat, covered, until just set.

Step 3 of 3

Sprinkle over fresh coriander, crumbled feta and cracked black pepper and serve with bread for scooping, if desired.
