- 1 bunch asparagus, halved crossways and lengthways
- 1 lemon, zested, juiced
- 20grams parmesan, finely grated

Description
Featuring fettuccine tossed with tuna flakes, fresh asparagus and lemon juice, this simple pasta recipe will become your new go-to dish.
Method
Step 1 of 3
Cook pasta in a large saucepan of boiling water according to packet instructions. Drain, reserving 1/3 cup cooking liquid.
Step 2 of 3
Meanwhile, heat reserved oil in a large, deep frying pan over medium-high heat. Add lemon zest and asparagus and cook for 3 minutes or until asparagus is bright green and tender. Add tuna and cook for 2 minutes or until heated through.
Step 3 of 3
Add pasta, lemon juice, reserved cooking liquid and half the parmesan. Cook, tossing, for 2 minutes or until heated through. Divide among bowls. Top with remaining parmesan and season with pepper.
