  • 2tablespoons passionfruit pulp
  • 2 cup lemonade (& ice)
  • 2 cup fresh orange juice

Method

Step 1 of 3

Cut 1 or 2 slices from the pineapple, cut into wedges and reserve. Peel pineapple, cut into quarters and remove core. Roughly chop, reserving about 1 cup of the pieces. Blend or juice remaining pineapple until smooth.

Step 2 of 3

Combine pineapple and orange juices in a large jug. Add chopped fruit including the reserved chopped pineapple and mint leaves.

Step 3 of 3

Stir in lemonade and ice and serve in glasses garnished with the reserved pineapple wedges.
