  • 1 red onion, diced
  • 200grams english spinach, shredded
  • 150grams feta, crumbled
  • 1/2 cup chargrilled capsicum, drained, sliced
  • 1tablespoons olive oil
  • 8 eggs, lightly beaten
  • 2tablespoons sage leaves (to garnish)
  • 4tablespoons pine nuts

Method

Step 1 of 4

Preheat oven to 160°C. Grease a 22cm quiche pan or pie dish.

Step 2 of 4

Heat oil in a frying pan over high heat. Add onion and cook for 5 minutes. Add spinach and sauté until wilted.

Step 3 of 4

Transfer to quiche pan. Top with capsicum. Pour over egg and season.

Step 4 of 4

Top with feta and pine nuts. Bake for 30 minutes or until golden and set. Garnish with sage and serve.
