Method

Step 1 of 3

Prepare rice as per packet instructions.

Step 2 of 3

Add rice and pumpkin soup to a large saucepan over medium heat. Fill one empty tub of soup with water and add to the pan. Cook for 5 minutes, stirring occasionally, until reduced. Stir in parmesan.

Step 3 of 3

Divide risotto among bowls, top with extra parmesan and serve with toasted sourdough.
