  • 2tablespoons pine nuts, toasted
  • 3 cloves fresh garlic, thinly sliced
  • 1teaspoons cracked black pepper
  • 3tablespoons olive oil

So simple, a tasty meat free and budget friendly meal for two.

Method

Step 1 of 4

Gather all ingredients together on bench. Cook pasta according to instructions on packet. While pasta is cooking cut roasted pumpkin pieces into small sizes. I roast extra pumpkin pieces a couple of nights prior when cooking a roast and have in the fridge ready to use.

Step 2 of 4

There's plenty of time to toast the pine nuts while pasta is cooking so take a small saucepan and add pine nuts and heat under medium heat until toasted. Toss often so they don't burn. This process only takes a minute or two. Set aside.

Step 3 of 4

Open bag of spinach and set aside. Slice the garlic. Zap pumpkin pieces in microwave for a minute to heat through.

Step 4 of 4

Add olive oil and garlic to large pan and heat on low heat for a few minutes. Then turn up heat and add the pasta, pumpkin, spinach and black pepper and toss together until heated through thoroughly. Plate up and sprinkle toasted pine nuts on top. Enjoy!
