Cream
  • 900milliliter thickened cream
  • 1/4 cup icing sugar mixture
  • 400grams spreadable cream cheese
Passionfruit Caramel
  • 1/2 cup thickened cream
  • 2 passionfruit, pulp removed
  • 2/3 cup caster sugar
  • 1 1/2tablespoons cornflour
  • 1 1/2teaspoons vanilla extract
  • 2teaspoons white vinegar
  • 1 mango
  • 2tablespoons mint leaves
  • 125grams raspberries
  • 1/4teaspoons cream of tartar
  • 1/2teaspoons ground cinnamon
  • 1/4teaspoons ground cloves
  • 1/2teaspoons ground ginger
  • 6 free range egg whites
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cup caster sugar

Method

Step 1 of 7

Preheat oven to 120°C. Draw 3 x 20cm circles onto 3 sheets of baking paper and place drawn-sides down onto baking trays.

Sift 1 cup caster sugar, brown sugar, cornflour and spices into a bowl.

In the bowl of an electric mixer, whisk egg whites, cream of tartar and a pinch of salt until soft peaks form. While whisking, gradually add remaining caster sugar, 1 tbs at a time, until stiff peaks form. Continue whisking and gradually add spice mixture until thick and glossy. Fold in vanilla and vinegar.

Divide mixture between trays and spread with a spatula to fill circles. Bake for 45 minutes or until dry. Turn oven off and prop door ajar. Leave meringues in oven to cool completely.

Meanwhile, to make the passionfruit caramel, stir sugar and 1/4 cup water in a small saucepan over medium heat until sugar dissolves. Simmer for 5-10 minutes or until mixture is a rich golden caramel. Remove from heat. Stir in cream and passionfruit. Cool.

To make the cream, place all the ingredients in the bowl of a stand mixer and whisk until thick. Fold through 1/2 cup passionfruit caramel.

Step 7 of 7

Place one meringue layer onto a serving platter or cake stand. Spread with one-third of the cream mixture. Repeat with remaining meringue and cream. Top with mango, raspberries, extra passionfruit and mint. Drizzle over remaining caramel and serve.
