- 100grams fresh lasagne pasta sheets
- 1/4 cup plain flour
- 40grams butter
- 500milliliter milk
- 1 large eggplant, sliced
- 1 pinch salt (for seasoning)
- 1/2 cup parmesan, grated
- 1 pinch pepper (for seasoning)
- 500grams vegetarian mince
- 1 cup mozzarella, grated
- 4 cups green salad (to serve)
- 2tablespoons olive oil (for brushing, greasing and pan frying)

Method
Step 1 of 6
Brush both sides of eggplant with olive oil and pan fry over medium heat for 5 minutes until golden brown and cooked through.
Step 2 of 6
Meanwhile make bechamel sauce; melt butter in a saucepan over medium heat. Add flour and stir for 1-2 minutes or until a paste forms. Add milk gradually, whisking constantly, and bring to the boil gently. Turn heat to low and simmer for 5 minutes.

Stir in 1/2 cup grated parmesan and season with salt and pepper.

Preheat oven to 180°C. Lightly grease a deep baking dish with olive oil.

Cover bottom with lasagne pasta sheets. Add half bolognese vegetarian mince in sauce, half the eggplant and half the bechamel sauce. Repeat layering, finishing with bechamel sauce.
Step 6 of 6
Sprinkle over 1/4 cup grated parmesan and 1 cup grated mozzarella. Bake for 45 minutes or until golden on top. Set aside for 5 minutes. Cut into slices and serve with a green salad.
