- 2tablespoons loose leaf Earl Grey tea
- 1 1/2 cups plain flour
- 200grams salted butter, chilled, chopped
- 1/2 cup caster sugar
- 1/2 cup rice flour
- 1teaspoons vanilla extract
- 1 cup Woolworths icing sugar mixture
- 1 lemon
Description
The sweet, tangy and floral flavours of Earl Grey tea sing in these tasty biscuits that are topped with a zesty lemon glaze. Enjoy with a strong cuppa.
Method
Step 1 of 4
Process tea and flour in a food processor for 1 minute or until tea is speckled through flour. Add butter, sugar, rice flour and vanilla. Process just until the mixture comes together.
Step 2 of 4
Turn onto a clean surface. Bring dough together with hands. Divide in half evenly. Roll each half into a 5cm-thick, 18-cm long log. Wrap in baking paper. Chill in fridge for 30 minutes.
Step 3 of 4
Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper. Cut logs into 1cm-thick slices. Reshape slices if necessary using the sides of your hands to round out any edges. Divide between prepared trays. Bake, swapping trays halfway through cooking time, for 18 minutes or until edges are starting to brown. Remove and set aside on trays for 5 minutes to cool. Transfer to a wire rack set over a baking tray to cool completely.
Step 4 of 4
Finely zest lemon. Cut lemon in half. Juice one half. Place icing sugar mixture in a small bowl. Mix in 1½ - 2 tbs lemon juice to make a smooth paste. Spoon icing paste over biscuits. Top with zest. Set aside for 30 minutes or until icing has set. Serve.
