  • 128grams Oreo Original Biscuits
  • 50grams unsalted butter, melted
  • 262grams Oreo Double Stuff Berry Choc Top Biscuits
  • 500grams Philadelphia Original Cream Cheese, softened
  • 395grams sweetened condensed milk
  • 4 free range eggs, at room temperature
  • 900mL thickened cream, save 300ml, whipped
  • 225grams Cadbury Milk Chocolate Melts, melted
  • 125grams raspberries

Description

With the flavours and textures of crunchy Oreo biscuits, this rich, fruity baked cheesecake makes it hard to stop at one slice.

Method

Step 1 of 4

Preheat oven to 160°C/140°C fan-forced. Grease and line base and side of a 22cm round springform pan with baking paper. Process original biscuits until crushed. Add butter, then process until combined. Press mixture over base of pan. Chill for 15 minutes.

Step 2 of 4

Process half of the berry biscuits until coarsely crushed. Transfer to a bowl. Process cream cheese and condensed milk until smooth. Add eggs and 600ml cream and process until smooth. Stir in crushed biscuits. Pour into pan. Bake for 55 minutes or until just set at centre. Turn oven off and cool cake with door ajar. Remove cake from oven and chill overnight.

Step 3 of 4

Meanwhile, tear two 40cm sheets of baking paper. Spread melted chocolate over 1 sheet, then top with the second sheet. Using a rolling pin, roll to distribute chocolate. Starting at a short end, roll up tightly and secure. Freeze for 1 hour or until firm.

Step 4 of 4

Place extra whipped cream in a piping bag fitted with a 2cm star nozzle and pipe cream around top edge of cake. Unroll chocolate from baking paper and break into shards. Press chocolate shards around edge of cake. Serve topped with raspberries and remaining berry biscuits.
