- 3 cloves garlic, crushed
- 2 cup long grain white rice, steamed (to serve)
- 1/4 cup coriander, leaves roughly chopped
- 1/4 cup continental parsley, roughly chopped
- 4 medium zucchini, trimmed
- 1tablespoons moroccan seasoning
- 2tablespoons olive oil
- 1teaspoons sea salt flakes
- 4 chicken breast fillets
- 2tablespoons lemon juice
Method
Step 1 of 3
Preheat oven to 200°C. Combine olive oil, lemon juice, seasoning, garlic, coriander, parsley and salt in a shallow ovenproof dish. Add chicken and turn to coat well with marinade. Cover and stand for 30 minutes.

To make zucchini ribbons. Using a vegetable peeler, run peeler down the length of zucchini forming ribbons. Bring a saucepan of water to the boil. Add zucchini ribbons and cook for 1-2 minutes or until just tender. Drain.
Step 3 of 3
Bake chicken for 20-25 minutes or until cooked through and golden. Serve chicken with steamed rice and zucchini ribbons. Spoon cooking juices over chicken.
