  • 3-4teaspoons Angostura bitters
  • 750milliliter sparkling wine, chilled (see tip)
  • 3/4 cup caster sugar

Method

Step 1 of 2

Mix the sugar and bitters together until evenly combined. The sugar will be like wet sand. Press firmly into a silicone heart mould. Bake in oven at 110°C for 1 hour to dry out. Cool before removing from mould.

Step 2 of 2

To serve, pop a heart into each glass and top up with Champagne.
