- 750grams pumpkin, skin and seeds removed
- 5milliliter virgin olive oil spray
- 200grams reduced fat feta, crumbled
- 2teaspoons Italian dried herbs
- 625grams ravioli (flavour of choice)
- 120grams baby spinach leaves
- 1/4 cup walnuts, roughly chopped (optional)

Method
Step 1 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. Cut pumpkin into 2cm cubes and place onto tray. Spray with olive oil. Sprinkle with Italian seasoning, salt and pepper. Roast for 20 minutes or until tender.
Step 2 of 3
Meanwhile, cook ravioli as per packet instructions. Drain, reserving cup of the cooking water. Return to saucepan with reserved water. Add spinach leaves and toss until just wilted.
Step 3 of 3
Spoon into bowls. Top with feta and walnuts, if using.
