  • 1/2 bunch parsley, chopped
  • 400grams no added salt cannellini beans, drained
  • 5milliliter virgin olive oil spray
  • 1/2teaspoons cinnamon
  • 2 cup wholemeal penne pasta, cooked
  • 60grams baby spinach
  • 250grams Simply Steam Zucchini Spaghetti
  • 250grams Simply Steam Cauliflower Rice
  • 1 1/3 cup shredded tasty cheese

Method

Step 1 of 4

Preheat oven to 180°C.

Step 2 of 4

Pierce both packets of cauliflower rice and zucchini spaghetti and microwave for 21/2 minutes. Remove and blitz in a blender until smooth. Season with pepper to taste.

Step 3 of 4

Stir together vegetable purée, cinnamon, spinach, parsley and penne, half the beans and half the cheese.

Step 4 of 4

Spray a 2L baking dish lightly with olive oil and pour in the vegetable and bean mixture. Top with remaining beans and cheese and bake for 20 minutes until golden on top.
