  • 1teaspoons cumin
  • 1/2 bunch parsley, fresh, chopped
  • 30grams breadcrumbs

Description

These healthy pumpkin falafels are baked instead of fried and are packed with flavour, perfect stuffed into a pita with salad.

Method

Step 1 of 3

Pre-heat the oven to 200°C. Place the pumpkin in a bowl with a dash of water, cover with clingfilm and microwave on high for 10 minutes until very soft.

Step 2 of 3

Tip the pumpkin, garlic, chickpeas, spices, parsley and breadcrumbs into a food processor and blitz to form a coarse dough.

Step 3 of 3

Roll the dough into balls with your hands place on a lightly greased baking sheet. Bake for 15 minutes until golden.
