  • 1 Arnott’s Royals Milk Chocolate biscuit
  • 2 cup pure icing sugar, sifted
  • 180grams unsalted butter, softened
  • 1teaspoons vanilla extract
  • 125grams raspberries, lightly mashed
  • 1/2 cup shredded coconut
  • 2 white mudcakes
  • 1 cup mini marshmallows
  • 1 Kinder Surprise

Method

Step 1 of 5

Using an electric mixer, beat butter in a bowl until pale and creamy. Gradually add icing sugar and vanilla, beating constantly until combined.

Remove paper from cakes and place 1 layer on serving plate. Spread top with 1/2 cup buttercream. Press raspberries into buttercream. Place other cake layer on top, pressing down gently. Cover top and sides of cake with a thin coating of buttercream. Freeze for 20 minutes.

Meanwhile, draw a bunny shape onto a piece of baking paper and lay on a tray. Place chocolate melts in a small snaplock bag. Microwave in 10-second bursts until melted and smooth. Snip corner from bag. Halve 1 mini marshmallow and attach to biscuit using a little chocolate. Set aside. Pipe chocolate around bunny outline. Chill for 1 minute to set. Fill centre with chocolate and tap tray on bench to smooth. Place biscuit onto still soft chocolate and chill until completely set.

Place coconut in a plastic bag. Add food colouring and rub well to colour coconut. Reserving 1 tbs, spread remaining buttercream over cake. Press coconut on top of cake.

To serve, break open Kinder, arrange on cake, scatter with some marshmallows, and place chocolate bunny on top of cake with a little of the reserved buttercream.
