  • 8 large Portobello mushrooms, stems removed
  • 5milliliter extra virgin olive oil spray
  • 1/2 cup sliced roasted capsicums, drained
  • 1/3 cup pitted Kalamata olives
  • 1 1/2tablespoons oregano leaves
  • 125grams Solanato tomatoes, quartered
  • 1 cup coarsely grated haloumi

Method

Step 1 of 2

Preheat a barbecue on medium-high heat according to manufacturer’s instructions. Spray mushrooms all over with oil. Combine remaining ingredients in a bowl. Fill mushrooms with mixture and spray tops with oil.

Step 2 of 2

Cook mushrooms on barbecue for 7-8 minutes, covered with lid or foil, or until cheese melts and mushrooms are tender. Serve.
