- 2tablespoons olive oil
- 2 large beetroots, peeled, grated
- 1 onion, finely chopped
- 2 carrots, chopped
- 1 parsnip, chopped
- 4 cup beef stock
- 2tablespoons tomato paste
- 2 bay leaves
- 1 garlic clove, crushed
- 2 cup savoy cabbage, finely shredded
- sour cream (to serve)
- 2tablespoons dill (to serve)
Description
Borscht is a traditional Ukrainian soup which is packed full of beetroot and veggies like cabbage, carrot and parsnip. The perfect winter warming soup.
Method
Step 1 of 4
Heat olive oil in a large saucepan over medium heat. Add beetroot, onion, carrot and parsnip. Cook, stirring occasionally, for approximately 8 minutes until vegetables have softened.
Step 2 of 4
Add stock, 4 cups water, tomato paste, bay leaves and garlic and season with pepper. Bring to the boil, then reduce to simmering and cook for 30 minutes.
Step 3 of 4
Add cabbage and simmer for a further 15 minutes.
Step 4 of 4
Serve in large bowls topped with sour cream and dill.
