Description
These crispy zucchini fries are real veggie treat served with tomato salsa for dipping.
Method
Step 1 of 4
Pre-heat the oven to 200°C/180°C fan-forced. In a large bowl, toss the zucchini matchsticks with the flour and salt.
Step 2 of 4
Beat the eggs in a small bowl and in a shallow dish, whisk the panko breadcrumbs, garlic powder and parmesan together.
Step 3 of 4
Take each matchstick, dust off any excess flour, dip in egg then breadcrumbs, turning to coat all sides and place on a baking sheet. Repeat until all matchsticks are coated.
Step 4 of 4
Drizzle with olive oil and add cracked black pepper. Bake for 20 minutes, until crisp and golden.
