  • 1 red onion, finely sliced
  • 600grams butternut pumpkin, sliced
  • 1/2 cup parmesan, grated
  • 1 pinch pepper (for seasoning)
  • 10 sheet sheets filo pastry
  • 1tablespoons olive oil
  • 1 egg, lightly whisked
  • 1/2 bunch fresh thyme, snipped
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Preheat oven to 200°C.

Step 2 of 4

Place pumpkin onto a lined baking tray in a single layer. Drizzle with half of the oil and season. Bake for 30 minutes or until tender.

Step 3 of 4

Brush pastry with butter and layer on top of each other on a baking tray, folding in edges. Whisk sour cream with egg in a bowl and stir in parmesan.

Step 4 of 4

Spread over pastry. Top with pumpkin, onion and thyme. Drizzle with remaining oil and bake for 15-20 minutes or until golden. Serve.
