Description

Elevate Indian feasts with puffy, deep-fried whole wheat puri to soak up all the delicious flavours. Serve the puri hot with batata bhaji and aamras.

Cooking tip:
The puri should be rolled at equal thickness all around, as uneven puri do not puff up well when cooked.

Method

Step 1 of 3

Stir flour and salt together in a large bowl. Create a well in the centre and add 3 tsp oil and 1/2 cup water. Using your hands, bring mixture together to form a soft firm dough. Knead for 5 minutes. Cover with a damp tea towel and rest for 10 minutes.

Step 2 of 3

Divide dough into 12 equal portions. Using 1 portion of dough, roll out into small 14cm round circles. Brush circles with 2 tbs remaining oil.

Step 3 of 3

Pour remaining oil into a large heavy-based saucepan to reach a depth of 8cm. Heat over high heat to 180⁰C (the oil is ready when a cube of bread crisps quickly without absorbing any oil). Carefully slide 1 puri into oil and fry for 5-7 seconds on one side, pressing gently under the oil until it expands. Turn over and fry very quickly for another 3-4 seconds on the other side. Remove when puffed and golden brown using a metal slotted spoon. Drain on paper towel. Serve hot with Batata bhaji and Aamras.
