  • 1/2 small Savoy cabbage, shredded
  • 5mL extra virgin olive oil cooking spray
  • 500grams Woolworths frozen carrot, peas and corn, blanched
  • 1/4 cup Vegemite® spread
  • 10 frozen spring roll wrappers, thawed
  • 250grams Woolworths mozzarella, cut into small cubes

Description

Give a classic appetiser a delicious makeover for a delightful snack. These easy-to-make Vegemite spring rolls will impress at any summer gathering.

Method

Step 1 of 3

Spray cabbage with oil. Heat a large non-stick frying pan over medium-high heat. Add cabbage and cook, stirring for 4-5 minutes or until tender. Cool. Transfer to a bowl. Add vegetables and spread. Mix well.

Step 2 of 3

For each roll, place a wrapper on a flat surface. Top with one-tenth of the vegetable mixture, then one-tenth of the mozzarella. Fold wrapper over filling, fold in sides, then roll up tightly to form a log. Repeat to make 10 rolls in total.

Step 3 of 3

Spray rolls with oil. Cook rolls in a 5L air fryer for 10-12 minutes, turning halfway through cooking, or until golden brown. Serve.
