  • 500grams Woolworths Greek-style natural yoghurt
  • 4 large truss tomatoes, sliced
  • 320grams mixture of coloured tomatoes, sliced
  • 1 small red onion, halved, sliced
  • 2tablespoons extra virgin olive oil
  • 2tablespoons balsamic vinegar
  • 1 clove garlic, crushed
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/3 cup pitted green olives, sliced
  • 1/2 bunch basil, leaves picked

Description

This juicy tomato salad is elevated with creamy labneh and a tangy olive dressing. Perfect for effortless summer entertaining.

Method

Step 1 of 3

Line a sieve with muslin cloth and place over a bowl. Spoon yoghurt into prepared sieve. Cover and refrigerate overnight.

Step 2 of 3

Arrange tomatoes and onion on a large plate. Combine oil, vinegar and garlic in a jug. Add olives and mix well. Drizzle over tomato mixture.

Step 3 of 3

Top with scoops of labneh. Season with freshly cracked black pepper. Serve sprinkled with basil.
