  • 150grams green beans, cut into 5cm lengths
  • 600grams basa fillets, cut into 2cm pieces
  • 1/2 punnet Thai basil leaves

Description

This flavourful yellow fish curry combines the delicate taste of basa fillets with aromatic Thai spices. On the table in 25 minutes, this hearty dish is perfect for weeknights.

Cook rice following packet instructions.

Meanwhile, heat oil in a large deep-frying pan over medium heat. Cook onion and capsicum for 5 minutes until softened. Add paste and cook for 1 minute until fragrant. Add coconut milk, sauce and sugar, and cook for a further 2 minutes. Add green beans and fish and cook for 5 minutes or until fish is cooked through.

Step 3 of 3

Spoon over rice and garnish with Thai basil leaves. Serve.
