  • 200grams bean vermicelli noodles
  • 315grams Woolworths Thai-style salad kit
  • 1/3 bunch mint, leaves picked
  • 1/3 bunch coriander, leaves picked
  • 2 Lebanese cucumbers, halved, sliced
  • 1/2 cup roasted unsalted peanuts, chopped
  • 1 lime, cut into wedges

Description

A vibrant explosion of Thai flavours in a refreshing noodle salad, this easy-to-make dish will hit the spot on a balmy day.

Method

Step 1 of 2

Place noodles in a heatproof bowl. Cover with boiling water. Stand for 3-4 minutes or until softened. Drain. Refresh under cold water. Drain well.

Step 2 of 2

Place salad kit and dressing in a large bowl. Add noodles, mint, coriander and cucumber and toss well. Spoon onto plates. Top with peanuts and crispy onion from kit. Serve with lime.
