- 1tablespoons vegetable oil
- 1 brown onion, sliced
- 2 cloves garlic, sliced
- 1/3 cup AYAM Thai Red Curry Paste
- 400grams peeled raw prawns
- 1/2 cup frozen green peas
- 100grams snow peas, sliced into 3cm pieces
- 4 spring onions, sliced
- 1/3 cup basil leaves

Description
Whip up this simple Thai red curry fried rice with prawns for an authentic taste of Thailand with rich, bold flavours.
Method
Step 1 of 4
Cook rice following packet instructions. Cool, then chill for 4 hours or until cold.
Step 2 of 4
Heat oil in a large deep-frying pan over medium heat. Cook brown onion and garlic for 4-5 minutes until softened slightly. Remove from the pan and place aside.
Step 3 of 4
Combine paste and prawns in a bowl. Add to pan and cook, stirring, for 2 minutes until browned. Add rice to pan along with any leftover paste in bowl with a splash of water. Cook for a further 10 minutes. Add green peas and snow peas, and cook for a further 3 minutes.
Step 4 of 4
Serve sprinkled with spring onion and basil.
