  • 1tablespoons extra virgin olive oil
  • 2 garlic cloves, sliced
  • 1 cup taco mince, heated
  • 1/3 cup mixed pitted olives, sliced
  • 2teaspoons grated lemon zest
  • 2tablespoons continental parsley, chopped

Description

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced.

Step 2 of 3

Coarsely chop potato and place on a lined baking tray. Sprinkle with paprika. Drizzle with oil. Scatter over garlic. Bake for 40 minutes or until golden brown.

Step 3 of 3

Top with taco mince, olives, lemon zest and parsley.
