  • 150grams salami, thinly sliced

  • 1/3 cup pitted Kalamata olives
  • 1/4 bunch continental parsley, leaves picked
  • 1tablespoons red wine vinegar
  • 1 clove garlic, crushed

Description

A Mediterranean twist on classic pizza, this refreshing and delightful summer salad will steal the show at any gathering.

Method

Step 1 of 2

Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Place bread on prepared tray and brush all over with 2 tbs oil. Sprinkle with herbs. Bake for 5-8 minutes or until golden brown and crisp.

Step 2 of 2

Combine lettuce, tomato, capsicum, salami and croutons in a shallow bowl. Top with bocconcini, olives and parsley. Whisk vinegar, garlic and remaining oil in a jug. Drizzle over salad. Season with freshly cracked black pepper. Serve.
