Spinach naan toasties with coriander raita

- 1/2teaspoons mild curry powder
- 50grams unsalted butter, softened
- 450grams garlic & herb naan bread
- 1/4 bunch coriander
- 120grams baby spinach leaves
- 1 cup Woolworths shredded mozzarella
- 1 lemon, zested, juiced
- 1/2 cup Woolworths Greek-style natural yoghurt
Description
Paired with a refreshing coriander raita, these delicious naan toasties filled with tender spinach and melted mozzarella will wow every time.
Method
Step 1 of 4
Combine butter and curry powder in a small bowl. Cut naan in half. Pick coriander leaves, then finely chop stems.
Step 2 of 4
Heat a sandwich press. Spread butter over 1 side of naan. Top 4 pieces of naan with mozzarella and spinach. Sandwich with remaining pieces of buttered naan.
Step 3 of 4
Cook naan, in batches, for 3-4 minutes or until golden and toasted.
Step 4 of 4
Combine lemon juice and zest, coriander stems and yoghurt in a bowl. Season with freshly cracked black pepper. Slice naan toasties in half. Sprinkle with coriander leaves. Serve with yoghurt raita.
