  • 173grams Woolworths teriyaki marinade
  • 500grams Woolworths RSPCA Approved chicken thigh fillets from the deli, trimmed
  • 2teaspoons extra virgin olive oil
  • 1 head broccoli, cut into florets
  • 450grams Woolworths microwave long-grain white rice
  • 1/4 red cabbage, shredded
  • 1/4 bunch spring onion, thinly sliced

Description

A quick and easy weeknight meal that combines succulent teriyaki chicken, fluffy rice and vibrant veggies for a budget-friendly flavour explosion.

Method

Step 1 of 4

Combine marinade and chicken in a large bowl. Heat oil in a large frying pan over medium heat. Cook chicken, turning halfway, for 12 minutes or until cooked through. Transfer to a board and cut into slices. Cover loosely with foil to keep warm.

Step 2 of 4

Blanch broccoli in boiling water for 5 minutes. Drain.

Step 3 of 4

Heat rice in the microwave on high for 2 minutes and 30 seconds.

Step 4 of 4

Divide rice amongst serving bowls. Add chicken, broccoli, cabbage and onion. Serve.
