  • 6 v2food® Plant Protein Miguel’s Smokey BBQ Sausages
  • 2tablespoons extra virgin olive oil
  • 6 brioche hot-dog buns
  • 1/4 red cabbage, thinly shredded
  • 1 large carrot, peeled, thinly shredded, peeled, thinly shredded
  • 1/2 small red onion, very thinly sliced
  • 1/2 bunch coriander, leaves picked
  • 1 avocado, mashed
  • 1/3 cup sriracha sauce

Description

Topped with a tangy, crunchy slaw, these plant-based sausage rolls make a deliciously easy meal.

Method

Step 1 of 3

Drizzle sausages with half of the oil and rub to coat evenly. Preheat a barbecue or chargrill over medium-high heat. Cook sausages, turning occasionally, for about 6-8 minutes, or until charred and heated. Add buns to grill and cook for 1-2 minutes or until toasted.

Step 2 of 3

Combine cabbage, carrot, onion and coriander in a large bowl. Add remaining oil and toss to coat.

Step 3 of 3

Fill buns with half of the slaw. Top with sausages and avocado. Drizzle with sriracha. Serve with remaining slaw.
